Those hectic mornings often force me to quickly pick something up at a café—an easy solution, but not the most economical or healthy. Luckily, a little extra meal-prepping effort can change all that!

Enter this recipe for egg bites with cottage cheese. Packed with protein from the eggs and cottage cheese, plus nutrients from veggies like bell peppers and spinach, these are basically bite-sized breakfast lifesavers. Plus, you only need 30 minutes to make a whole batch! No matter how busy you are, you probably have a spare half hour on a Sunday—which is when I prep these egg bites so they’ll be ready for me to grab when I’m on my way out the door during the week.

Mushrooms, kale, and asparagus, for example, could all be yummy. I also love adding a touch of whatever herb I have on hand for some extra flavor. My personal favorites are dill and parsley. Or you could add a dash of hot paprika or red pepper flakes for a spicy kick.

Ingredients

8 large eggs1 cup cottage cheese1/2 teaspoon garlic powder1/2 teaspoon salt1/4 teaspoon black pepper3/4 cup fresh spinach chopped2/3 cup red bell pepper diced

Instructions

Heat oven to 350°F and prepare a 12-cup muffin tin with liners or a light layer of cooking spray.
Blend the eggs, cottage cheese, garlic powder, salt, and black pepper in a blender until the mixture is smooth.
Transfer the blended mixture to a bowl. Mix in the chopped spinach and diced red bell pepper until well integrated.
Distribute the egg mixture evenly into the muffin cups, filling each to approximately two-thirds capacity to leave space for rising.
Bake in the preheated oven for 20-25 minutes or until the egg bites are set. Allow them to cool for a few minutes before removing from the tin.
