Egg Stir-Fry

If you’re craving Chinese for breakfast or brunch, check out this deliciously easy meal that takes only ten minutes to make.

While fluffy and golden scrambled eggs are always a great way to start the day, sometimes I get the hankering for a little more in the morning. If you agree, then check out this scrumptious egg stir-fry—a Chinese-inspired blend of eggs, onion, bell pepper, garlic, and soy sauce. With such a sublime mix of savory flavors, this dish makes a splendid addition to any meal. You could even pair it with Basmati Rice for a super-filling dinner.

Topped with freshly chopped green onion and a dash of hot sauce, egg stir-fry can be one of the most colorful concoctions on your brunch table. As enjoyable to taste as it is to look at, this dish is sure to be a hit with family and friends. While it cooks, the tasty aroma of onion and garlic fills the house, calling all your guests to the kitchen table.

I, for one, adore making this for my loved ones in the morning because it only takes ten minutes and a few simple ingredients. Even if I’m feeling drained after a late night, egg stir-fry takes little effort to whip up and is sure to wow your crowd.

Is Egg Stir-Fry Healthy?

Packed with egg protein and fiber from the veggies, this simple dish contains plenty of nutrients. Feel free to up the protein even more by adding Bacon or Air-Fryer Breakfast Sausage. Alternatively, to keep the meal vegetarian, try these Instant Pot Chickpeas.

There are a few ways to adjust the recipe for certain dietary restrictions. For a vegan version of egg stir-fry, you could replace regular eggs with a Tofu Scramble. For those with wheat allergies or sensitivity, use gluten-free soy sauce. As you can see, this simple and versatile recipe can easily accommodate all kinds of diets.

An Eggcellent Stir-Fry Seasoning

The base seasoning combo for this recipe includes soy sauce, salt, and pepper, but you can amplify this even more with a few extra additions. Personally, I like to season my egg stir-fry with one teaspoon each of red pepper flakes, cumin, and Chinese five spice. The mix of warm, slightly sweet spices and hot pepper is totally scrumptious and worth the few extra minutes of prep. You can also feel free to experiment with different herbs like cilantro, parsley, or basil.

FAQs & Tips

How Do I Store Leftovers?

While egg stir-fry is best enjoyed fresh, you can store it in an airtight container once it’s cooled. Refrigerate it for up to 4 days, reheating in the microwave for 30-60 seconds when you’re ready to dig in. For longer storage, transfer it to a freezer-safe container and freeze for up to 3 months. Make sure to thaw it in the fridge overnight before reheating the next day.

Can I Use Different Veggies?

Yes. While this recipe calls for green bell peppers, you can use any color bell pepper and top it off with your favorite vegetables. When I make this egg stir-fry, I sometimes like to add sliced button mushrooms, spinach, and chopped asparagus. Feel free to experiment with as many different veggies as you’d like!

What’s The Rule Of Thumb For Stir-Frying?

Most chefs recommend adding liquid—in this case, soy sauce—at the very end of stir-frying. This prevents the dish from drying out, keeping it nice and moist. If you’re including meat, it’s also recommended to cook the protein and veggies one at a time in that order, so as to prevent cross-contamination and uneven cooking. These two handy tips can help you get the hang of stir-frying in no time.

Serving Suggestions

While egg stir-fry stands strong on its own, you can create a beautiful brunch by serving this dish with Breakfast Sausage, Mashed Potato Pancakes, or Avocado Toast. But if it’s a dazzling dinner you’re after, try it with Soba Noodles, Turmeric Rice, or Air-Fryer Potstickers. With so many ways to dish it out, egg stir-fry can become a staple in any household, especially those that favor Asian cuisine.
