Roasted Sweet Potato Cubes

Enjoy the delicious flavors of Roasted Sweet Potato Cubes for a simple and healthy side dish.

When you’re looking for the perfect side dish, sometimes the simple approach is the best approach. That’s the case with this roasted sweet potato cubes recipe. The only prep work required is to cut the sweet potatoes into cubes. If you’re short on time, you may be able to find pre-cut sweet potatoes in your local grocery store. After tossing the cubes with olive oil, salt, and pepper, you can let the oven do the rest. After about 30 minutes, these sweet potatoes will be savory, crispy, and downright delicious.

One of my favorite things about roasted sweet potatoes has been experimenting with this recipe and the cooking technique. First, you’ll want to make sure that you cut the sweet potatoes into uniform cubes so that they cook evenly. My other tip is to use a much larger baking sheet than you may think. You’ll want to avoid having the sweet potato cubes overlapping so that they have space to roast properly. Overlapping cubes can end up steaming them instead of roasting.

Are Roasted Sweet Potato Cubes Healthy?

With sweet potatoes as the primary ingredient, this is considered to be a healthy dish. Sweet potatoes are considered a “good carb,” as they’re high in fiber, vitamin A, and potassium. They’re also low in calories, fat and sodium. As long as you don’t go overboard with the olive oil, salt, and pepper, this will remain a healthy, vegan-friendly recipe. While you may be tempted to peel the sweet potatoes, I recommend keeping the skin on to retain the nutrients.

A Little Extra Flavor

Since this recipe only has a few simple ingredients, you’ll have ample opportunities to customize the sweet potatoes. If you’re in the mood for a little heat in this side dish, you can add chili powder and smoked paprika to make the sweet potatoes a little spicier. My personal favorite is going the sweet route, so I add brown sugar, nutmeg, and cinnamon before roasting. Some people actually believe that brown sugar is the secret to crisp, caramelized sweet potatoes. Just keep in mind that brown sugar does add calories to the already-sweet dish.

How Do I Store Leftovers?

Once cooled, leftover sweet potato cubes can be refrigerated in an airtight container for up to 5 days. They will keep in the freezer for about 3 months. When you’re ready to eat the leftovers, you’ll want to pop them back in the oven or an air fryer to ensure that they stay crispy.

Serving Suggestions

Roasted sweet potato cubes can be a side dish for just about anything. One of my personal favorite lunches is this Winter Salad Recipe with a side of the roasted sweet potato cubes. The apples and maple syrup in the salad are the perfect complement to the sweet potatoes.

When I’m ready for dinner, I love to eat roasted sweet potato cubes with a healthy, lean protein like Oven-Baked Chicken Thighs or Asian Turkey Meatballs. You may also want to try sweet potatoes instead of traditional mashed potatoes as a side for Easy Low-Carb Paleo Meatloaf.

Ingredients

1 3/4 pounds sweet potatoes peeled and cut into 1/2 to 3/4 inch cubes3 tablespoons olive oil1 teaspoon salt or to taste1/2 teaspoon black pepper or to tasteParsley or cilantro chopped (optional for garnish)

Instructions

Preheat the oven to 400°F.
In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.
Spread the seasoned sweet potato cubes in a single layer on a parchment-lined baking sheet.
Bake for 25-30 minutes in the preheated oven, flipping the cubes halfway through the cooking time.
When sweet potatoes are golden and crispy, remove them from the oven. If desired, season with additional salt and pepper, and garnish with parsley or cilantro before serving.
