Whenever I make this recipe, I swap out the canned pineapple for fresh, and if it’s in season, I’ll use cherries from my local farmers’ market. Feel free to use any fruit you prefer. You can use kiwis, bananas, apples, mangoes, or even jackfruit!
How do I store leftovers?
You can store any leftover rice in an airtight container in the refrigerator for up to 3 days. To serve again, make sure to give the rice a good mix and garnish with a fresh maraschino cherry.
