Can I Use A Different Kind Of Cheese?

Yes! If you aren’t a fan of goat cheese, no problem! You can use whichever cheese you prefer. I’d suggest a tangier kind, like feta or Gorgonzola.

How Do I Prevent Dates From Burning Before The Bacon Is Fully Cooked?

It’s important that you don’t skip the step that involves pre-cooking the bacon prior to wrapping the dates, otherwise the bacon won’t have enough time to cook and the dates and cheese will inevitably burn.

Ingredients

10 slices bacon20 Medjool dates5 ounces goat cheese crumbledChopped cilantro or parsley for garnish optional

Instructions

Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Arrange the bacon strips next to each other on the baking sheet. Cook for roughly 10 minutes, until they are halfway cooked but remain flexible.
Meanwhile, make a lengthwise cut in each date to remove pits. Stuff each date with goat cheese and press to close.
After the bacon has cooled to touch, cut the strips in half. Take a half strip and wrap it around each stuffed date, securing it with a toothpick.
Place the bacon-wrapped dates on a fresh sheet of parchment paper on the baking sheet. Bake for 5-7 minutes per side, flipping halfway through, until bacon is crispy.
When serving, sprinkle with chopped parsley or cilantro if desired.
