Ingredients

4 large eggsSalt to tasteBlack pepper to taste1 tablespoon vegetable oil divided1 small onion thinly sliced1/2 large bell pepper sliced3 garlic cloves minced1 tablespoon light soy sauce1 green onion chopped (plus more for garnish)

Instructions

Crack eggs into a bowl. Add a pinch of salt and pepper, then beat until combined.
Heat 1/2 tablespoon of oil in a large skillet over medium-high heat. Add beaten eggs and stir until softly scrambled.
Remove the eggs from the pan and set them aside. In the same skillet, add the remaining oil and sauté the onion, bell pepper, and garlic for about 2-3 minutes until just softened.
Return the eggs to the skillet and drizzle the light soy sauce over the mixture. Stir-fry everything together for another 1-2 minutes until well combined.
Incorporate green onion, season with salt and pepper to taste, and serve right away, garnished with more green onions.
