Steak Butter

Keep this velvety, herb-infused compound butter on hand for your next steak night.

Two Christmases ago, I gifted a loved one a personalized basket that included a log of homemade rosemary-honey compound butter, wrapped in parchment paper and tied with a bright red ribbon. To this day, it’s still something they will bring up and thank me for. And butter seems to be having a real moment. I don’t know if you’ve noticed, but butter-centric content has been flooding the internet lately. It appears on my social media feeds daily. Pristinely edited videos of keto influencers slicing into their rare sirloin on a cherrywood Boos Block in the sun, with a bowl of grass-fed butter for dipping, are everywhere.

It doesn’t feel like it was that long ago when butter was considered pretty unhealthy, but things have certainly shifted. Today, the general consensus is that if enjoyed in moderation as part of a balanced diet, butter doesn’t seem to be the enemy anymore. I’ll admit, I’m pretty pleased about that. While there’s no denying that processed “buttery spreads” are best avoided, real butter is made from just two simple ingredients: heavy cream and salt. When you make something like this delicious steak butter at home, you have full control over the quality of the ingredients, and that’s a beautiful thing. This easy recipe, made with just a few simple ingredients (butter, garlic, fresh herbs, spices, and lemon) will elevate the flavor of your steak in a big way.

Is Steak Butter Healthy?

Because butter is high in fat, it’s best if consumed in moderation. The main ingredient in butter is heavy cream, making it an ultra-rich indulgence that really shines when paired with your favorite cut of steak. If you’re on a keto diet or have other dietary restrictions, this recipe is keto-friendly, low-carb, and gluten-free.

Fully Customizable Steak Butter

While this steak butter is already full of bright and complex flavor, it’s possible to adjust it to suit your specific tastes. To amp up the garlic flavor, add an extra clove. If you’d like to add some heat, you can add a pinch of red chili flakes or cayenne pepper to the compound. Not a huge fan of the particular herbs used here? You can use whichever herbs you love most–basil, tarragon, chives, you name it. Play around with the flavor by adding a teaspoon of Dijon mustard, a dab of anchovy paste, or a splash of Worcestershire sauce, and you’ll be met with a deep umami flavor that’ll bring out the hearty flavors of steak.

FAQs & Tips

How Do I Store Leftovers?

Because this steak butter contains raw garlic and fresh herbs, make sure to store it in an airtight container in the fridge and consume it within 1 week. Do not store at room temperature as you’ll run the risk of spoilage. Alternatively, you can store your steak butter in a freezer-safe container in the freezer for up to 6 months.

How Can I Extend The Shelf Life Of My Steak Butter?

Adding shelf-stable ingredients to your steak butter may lengthen its shelf life, but it’s not guaranteed. The best way to extend the shelf life of your steak butter is to freeze it.

Can I Use Pre-Salted Butter?

Yes, but I recommend using unsalted butter. This way, you can add salt as you see fit and have better control of the flavor and the amount of salt your steak butter contains.

Serving Suggestions

This steak butter would elevate many dishes, not just steak. To start, I strongly suggest these delicious Air-Fryer Filet Mignon and Steamed Shrimp recipes. This Oven-Cooked Top Sirloin is another top-notch option, too. If you want to enjoy this steak butter on a vegetable, try Instant-Pot Corn On The Cob or Air-Fryer Asparagus. You can even use it on bread, such as sliced baguette or fresh baked crusty sourdough. The application possibilities are endless.
