I’m not ashamed to say that you can find me enjoying avocado toast in some form at least a few times a week. It is one of the easiest breakfasts to make at home, even on a busy morning. If I’m really strapped for time, I skip the whole mashing thing and just slice the avocado right onto the toast.

Using vegan, gluten-free bread makes this recipe suitable for individuals with gluten intolerance. If desired, adding some hummus or chickpeas can help increase the protein in this dish.

How To Create An Avocado Toast Charcuterie Board

Charcuterie boards are all the rage these days, and yes, I’ve jumped on this trend, too. They’re great for parties, and creating an avocado toast charcuterie board is ideal for a weekend brunch, a bridal shower, a baby shower, or a book club get-together.

How do you get started? I recommend stocking up on a variety of vegan breads, bagels, and crackers so people have options for their bases. Fill small bowls with the mashed avocado from this recipe, vegan scrambled eggs (link in the serving suggestions section below), chopped chives, capers, and pumpkin seeds. Place the bowls around the board, surrounded by the various slices of toasted bread, crackers, grapes, and berries. Add slices of tomatoes, red onions, radishes, and avocados. Ingredients

2 slices whole grain bread1/2 large ripe avocado or one small avocado1 teaspoon lemon juice1/8 teaspoon kosher salt plus more to tastePinch of black pepperPinch of garlic powderPinch of onion powderOptional: everything bagel seasoning to tasteOptional: red pepper flakes for garnish

Instructions

Place the 2 slices of whole grain bread in a toaster and toast until golden brown.
Slice the ripe avocado in half and discard the pit. Scoop out the flesh into a bowl and mash it with a fork. Mix in lemon juice, salt, black pepper, garlic powder, and onion powder. Adjust seasonings as needed.
Evenly spread the avocado mixture on the toasted bread. For added flavor, top with everything bagel seasoning or red pepper flakes if you’d like. Serve right away.
