Glorified rice reminds me of two things: my childhood summers spent at my aunt’s cottage on Lake Huron and, most importantly, my Midwestern mom! My mom, being born and raised in Michigan, loved cold dessert salads like this glorified rice recipe. On every picnic table, there was either strawberry Jell-O salad filled with whipped cream and fresh berries, or her take on glorified rice. While it might sound a bit odd to serve alongside grilled hot dogs and a rack of baby back ribs, it’s actually quite common to include some sweet dessert salads on the table in the Midwest. 

When I first stumbled upon this recipe, it drew back memories from my childhood and reminded me of the reason why I like these funky dessert salads. If you’ve had one at a BBQ before, you know that the interplay of sweet salads mixed with savory dishes is absolutely divine. While I wouldn’t suggest dipping your hot dog directly into this glorified rice recipe, consider serving it as a side at your next backyard bash, and you might be amazed at how well it complements savory main courses. Everything from the sweet tropical flavor of the canned pineapple, the soft texture of white rice, to the tart taste of the maraschino cherries will make you wonder why you haven’t made this recipe sooner! 

Can I use fresh fruit in this recipe?

Yes! You can totally use fresh fruit in this recipe instead of using the canned pineapple and maraschino cherries. Whenever I make this recipe, I swap out the canned pineapple for fresh, and if it’s in season, I’ll use cherries from my local farmers’ market. Feel free to use any fruit you prefer. You can use kiwis, bananas, apples, mangoes, or even jackfruit! 

How do I store leftovers?

You can store any leftover rice in an airtight container in the refrigerator for up to 3 days. To serve again, make sure to give the rice a good mix and garnish with a fresh maraschino cherry. 

Serving suggestions

Serve this glorified rice with a dollop of whipped cream, a maraschino cherry, and a handful of chopped nuts. I love eating a bowl of this glorified rice after a light, easy meal of BBQ Pork Chops, and Roasted Broccoli And Cauliflower. If you want to elevate the glorified rice to the next level, you can drizzle it with this Strawberry Compote or this Homemade Cranberry Sauce With Maple And Orange

Ingredients

2 cups cooked and chilled white rice1 14-ounce can crushed pineapple drained4 tablespoons powdered sugar1 cup miniature marshmallows1 cup heavy cream whipped4 teaspoons granulated sugar3/4 teaspoon vanilla extractMaraschino cherries for garnish optional

Instructions

In a large bowl, mix the cold white rice, drained crushed pineapple, powdered sugar, and miniature marshmallows.
In a separate bowl, whip the heavy cream with sugar and vanilla until stiff peaks form. Gently fold the whipped cream into the rice mixture until evenly combined.
Cover the bowl and chill in the refrigerator for at least 2 hours to allow the flavors to blend. Before serving, garnish with maraschino cherries if desired.
