With summertime on the horizon, families across the US are gearing up their grills for all kinds of yummy meals. If you’ve got a picnic or BBQ coming up but you don’t yet know what to make, consider grilled potatoes—a simple, straightforward way to cook red potatoes in a mouthwatering medley of herbs and spices. Each bite brims with rosemary, oregano, garlic, onion, salt, pepper, and paprika. Plus, you’re invited to top it all off with freshly chopped parsley and/or salty Parmesan. But the fun doesn’t stop there…

Although one batch only serves four, this recipe can easily be doubled or tripled to suit a big family’s needs. Heaven knows my family needs this… when we make grilled potatoes for Independence Day, we usually quadruple the batch so that extended family and friends can enjoy, too. The only thing to keep in mind is that you might need another baking sheet, so you can grill the potatoes in rounds throughout the afternoon.

Additionally, grilled potatoes are a great way to teach kids or new chefs how to grill safely, because it all gets cooked on a baking sheet covered with aluminum foil. Less mess or stress, and more exclaiming “yes!” when they come out golden brown with a light, smoky char. It’s a simple yet marvelous way to kick your grilling game up a notch, with almost no effort. Families of all sizes will come to love this one for sure!

Is it safe to grill potatoes?

Some folks are concerned with potential health risks and the mess that can occur when grilling foods, but this recipe in particular can dissolve those worries quickly. You see, although grilling meat can produce cancer-causing compounds in the excess char, grilling vegetables (like potatoes) is generally safe, with much lower levels of carcinogens in their blackened parts. Plus, this recipe takes out all the hassle by keeping the potatoes on a baking sheet instead of on the grill directly. Not only does this lessen the mess, it also lowers the risk of accidental burning. Enjoy all the smoky flavors without causing stress or mess.

How do I store leftovers?

Once cooled, grilled potatoes can be refrigerated in an airtight container for 3-4 days. For longer storage, transfer them to a freezer-safe container and freeze for up to 3 months, making sure to thaw them in the fridge the night before reheating. To reheat, pop them in the oven at 350°F for 10-15 minutes, until they’re completely warm. If they need more moisture, lightly coat them again with olive oil.

Serving suggestions

Ingredients

1 1/2 pounds baby red potatoes rinsed and dried1/2 teaspoon dried rosemary3/4 teaspoon dried oregano1 teaspoon garlic powder3/4 teaspoon onion powder3/4 teaspoon kosher salt1/2 teaspoon ground black pepper1/2 teaspoon paprika2 tablespoons extra-virgin olive oilChopped fresh parsley optionalGrated Parmesan cheese optional

Instructions

Slice the potatoes into 1/2-inch thick pieces; adjust size for smaller potatoes as needed.
In a small bowl, combine the rosemary, oregano, garlic powder, onion powder, kosher salt, black pepper, and paprika. Pour the olive oil over the potatoes and add the spice blend. Toss everything together to ensure even coating.
Heat your grill to medium-high (approximately 400°F). On a baking sheet, place two large sheets of heavy-duty foil that are lightly coated with non-stick spray.
Arrange the seasoned potatoes in a single layer, then cover with another sheet of foil, sealing the edges while leaving a small vent for steam.
Place the foil packet on the grill and cook for 15 minutes. Carefully open it and flip the potatoes. Grill for another 7-10 minutes until tender and golden.
Transfer the grilled potatoes to a serving bowl. Garnish with chopped fresh parsley and a sprinkle of Parmesan cheese if desired, then serve warm.
