Ingredients

3/4 cup granulated sugar3 large eggs1 egg yolk1/2 cup fresh lime juice4 tablespoons unsalted butter cut into pieces2 tablespoons lime zest

Instructions

In a stainless steel bowl, whisk the granulated sugar, eggs, yolk, and lime juice together.
Set over a pot of simmering water and continuously whisk to prevent the egg from curdling, cooking until the mixture thickens, roughly 10-15 minutes.
Take the pot off heat and strain the curd using a fine mesh sieve set over a medium bowl, pressing it with a spoon as needed.
Gradually incorporate the butter chunks and zest into the heated lime mixture, mixing until the butter fully melts and the mixture achieves a smooth consistency.
Transfer the lime curd to a clean jar. Let it cool to room temperature, then cover and refrigerate. The lime curd will thicken further as it cools.
