It’s often been said that this dish will make someone propose in an instant because it is so good. After all, a way to someone’s heart is through their stomach, right? Whether it works for popping the question or not, one thing is for sure. This utterly delicious, creamy chicken dish is bursting with garlicky, savory flavor.

One of my all-time favorite ways to prepare chicken is in a sauce, whether tomato-based or creamy. This recipe gives me the best of both worlds: a rich sauce of heavy cream, Dijon mustard, chicken stock, and Parmesan cheese, paired with chopped sun-dried tomatoes for that delicious tomatoey flavor. I recommend using freshly grated Parmesan for this recipe to avoid fillers in pre-grated cheese that can hinder smooth melting. Also, you can make this dish gluten-free by switching to gluten-free all-purpose flour or omitting the flour entirely.

Another benefit of this recipe is that it takes less than 30 minutes to prepare and doesn’t require any special ingredients. Most of what you need is probably already in your pantry. So, even if dinner is planned at the last minute, you can still make a delicious meal. I start a pot of water boiling for some noodles right away so that they are done around the same time as the chicken. While the sauce simmers, you can prepare a crisp salad or tender vegetables.

The trick to making a perfect dish is to slice the chicken breasts evenly so that they have the same thickness. You can also purchase pre-sliced thin chicken cutlets. Use a meat mallet, if necessary, to pound any pieces that might be too thick. That way, your chicken will cook evenly over medium heat (never high, or it will dry out). Using a meat or poultry thermometer is recommended to ensure the chicken reaches an internal temperature of 165°F. Skinless, boneless chicken thighs will also work in this recipe, though you may need to cook them a bit longer.

How do I store leftovers?

Allow leftover marry me chicken to cool to room temperature, then refrigerate it in an airtight container for up to 3 days. Reheat leftovers over low heat on the stove. Add a splash of water or chicken stock, if needed, to loosen the sauce. You can also microwave it in 60-second increments, but I prefer the stovetop method of reheating. Microwaving leftover chicken can sometimes make it rubbery. Freezing is not recommended due to the creamy sauce, which can become grainy and change texture when frozen.

A great way to begin a meal of marry me chicken is with a crisp garden salad. Since it’s ideal to balance the richness of the sauce with something refreshing and tangy, I recommend trying Fennel-Apple Salad, Greek Cucumber Salad, or classic Caesar Salad. Serve the chicken with some Rice Cooker Brown Rice, fluffy Microwave Rice, Garlic Butter Pasta, or creamy Garlic Mashed Potatoes. Parmesan Brussels Sprouts is an excellent vegetable to serve with the chicken. Another option is to combine your pasta and vegetables into one delicious side dish, such as Broccoli Pasta or Asparagus Pasta. Finally, because chocolate is associated with romance, make some Chocolate Crème Brûlée for dessert. How can anyone resist a meal like this?

Ingredients

  • 3 large boneless, skinless chicken breasts sliced lengthwise into thin cutlets
  • Kosher salt and black pepper to taste
  • 1/3 cup all-purpose flour
  • 1 1/2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 teaspoon Dijon mustard
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon chili flakes
  • 1/2 teaspoon Italian seasoning
  • 1/3 cup chopped sun-dried tomatoes
  • Fresh basil leaves chopped, for garnish

Instructions

  • Season the chicken cutlets with salt and pepper. Dredge each cutlet lightly in all-purpose flour, shaking off any excess.
  • Heat the olive oil and butter in a large skillet over medium heat. Add the floured chicken and sear each side for 4-5 minutes until golden brown and cooked through. Transfer the chicken to a plate.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken stock and stir, scraping up any brown bits from the pan.
  • Reduce the heat to medium-low. Stir in the heavy cream, Dijon mustard, and grated Parmesan cheese. Add the chili flakes and Italian seasoning, letting the sauce simmer for a couple of minutes.
  • Return the seared chicken to the skillet along with the chopped sun-dried tomatoes. Simmer until the sauce thickens and the chicken is heated through. Garnish with fresh basil and serve warm over pasta or rice.
