Nine times out of 10, the reason my family members don’t eat cottage cheese is because of the texture. They don’t like how chunky it is and how watery it can get just sitting in the container. But what they don’t yet know is how tantalizing cottage cheese is once it’s been whipped to creamy perfection with natural flavor enhancers like lemon, salt, pepper, and herbs. With a rich and smooth spread like this, almost any meal or snack transforms into total decadence.

One of the best occasions to dish out whipped cottage cheese is for holidays like New Year’s Eve or the Fourth of July. In my family, we often huddle in a circle around the picnic or coffee tables, deep in conversation with something to munch on in our hands. Whipped cottage cheese, plus a selection of crackers and veggie sticks, is one of the yummiest and easiest snacks for these moments.

And what’s even better is that you don’t need to eat a lot. With all the protein in cottage cheese, there’s plenty of opportunity to feel satiated in just a few scoops or dollops. So whether you’re dipping snacks into it or topping it onto a meal, whipped cottage cheese is sure to satisfy.

Why add lemon juice?

Growing up, I was told to never add citrus to dairy, because it will curdle the milk and cause an upset stomach. But that’s not a problem here, because cottage cheese is already curdled, and it’s only a small amount of lemon juice—not to spoil the dairy, but to complement its creamy, slightly sweet taste. A tablespoon of lemon juice adds a pop of tangy flavor that’s reminiscent of sour cream, so if you know you like that kind of dip, then try it out in this and taste for yourself.

How do I store leftovers?

Transfer your leftover whipped cottage cheese to an airtight container and refrigerate it for up to 1 week. It’s easy to keep it handy for meal prep throughout the week, and you’ll be surprised with how many ways you can dish it out. I don’t recommend freezing it, though, as this could ruin the velvety texture and cause it to be too watery.

Serving suggestions

Ready for a savory snack to enliven your next shindig? Dish out a bowl of whipped cottage cheese with Carrot Chips, Spinach Chips, Air-Fryer Potato Chips, and Zucchini Fries for dipping. For a more hands-on meal, spread some whipped cottage cheese onto Garlic Toast, Cubano Sandwich, or a copycat Panera Cinnamon Crunch Bagel. As you can see, this creamy condiment works well for both savory and sweet delicacies.

Ingredients

1 16-ounce container whole milk cottage cheese
1 tablespoon lemon juice optional
Pinch of salt and pepper optional
Fresh herbs optional, such as chives, parsley, or dill

Instructions

Place the cottage cheese in a food processor. Blend on high for 30-60 seconds until very smooth. Stop and scrape down the sides of the bowl if needed.
If using, add lemon juice, salt, and pepper. Pulse briefly to mix in seasonings without thinning the texture.
Scoop the whipped cottage cheese into a serving bowl and garnish with fresh herbs if desired. Enjoy it on toast, with fresh fruit, or as a dip with raw vegetables.
